Fields available to user for "Y Data" in the profile plot

Currently, the "Y Data" dropdown includes all fields, many of which are constant or not relevant/useful:

For example, for Atl06, can remove options to display longitude, extent_id, x_atc, latitude, spot, gt, segment_id, rgt, cycle, region, time, and potentially others.

Can prepare similar lists for relevant fields to use for y axis in atl03, atl08, etc.
