- 1 tsp of fenugreek seeds
- 6 dried chilies
- 1/2 C Paprika
- 2 tsp Ground Ginger
- 2 tsp Onion Powder
- 1/2 tsp Ground Allspice
- 1 tsp Ground Nutmeg
- 1 T Cardamom Pods (or 1 tsp ground cardamom)
- 1/2 tsp Garlic Powder
- 1 1/2 T Salt
- 1/2 tsp Ground Cinnamon
- 10 Cloves Garlic
- 1 tsp Ground Cumin
- In a bowl add all the ground spices.
- On low heat a saucepan and toast the fenugreek seeds, cardamom pods, chilies, cloves, and onion and toast for 2 min.
- Remove and let it cool down for few minutes.
- Break the cardamom pods and get the seeds.
- Discard the stems from the chilies and grind all the toasted spices together.
- Toast all the spices together in saucepan for 5 min.
- Put in a jar and store.
