Berbere Spice

Ingredients:

  • 1 tsp of fenugreek seeds
  • 6 dried chilies
  • 1/2 C Paprika
  • 2 tsp Ground Ginger
  • 2 tsp Onion Powder
  • 1/2 tsp Ground Allspice
  • 1 tsp Ground Nutmeg
  • 1 T Cardamom Pods (or 1 tsp ground cardamom)
  • 1/2 tsp Garlic Powder
  • 1 1/2 T Salt
  • 1/2 tsp Ground Cinnamon
  • 10 Cloves Garlic
  • 1 tsp Ground Cumin

Method:

  1. In a bowl add all the ground spices.
  2. On low heat a saucepan and toast the fenugreek seeds, cardamom pods, chilies, cloves, and onion and toast for 2 min.
  3. Remove and let it cool down for few minutes.
  4. Break the cardamom pods and get the seeds.
  5. Discard the stems from the chilies and grind all the toasted spices together.
  6. Toast all the spices together in saucepan for 5 min.
  7. Put in a jar and store.
